Refreshing Beetroot and Carrot Juice

This is my favourite juice of all time.  Also loved by our two year old.  It’s a vibrant and earthy tonic, yet smooth and sweet.  The lemon and ginger adds a lovely little tang.  It’s rich in iron, vitamin C and is great for a gentle cleanse or as a pick-me-up during times of colds and coughs.  You can substitute some of the carrot for sweet potato if you like.  Or drop the beetroot if it’s not your thing (but do give it a go as it’s awesome!) and add an extra carrot.  Drink first thing for a really energy kick and nutrient-packed start to your day.

Preparation time: 10-15 minutes

Serves: 2, makes about 500ml (or save a glass for the next day – keep in a jar or bottle in the fridge)


  • 1 small beetroot plus stalks and leaves
  • 3-4 medium carrots
  • 2 apples
  • ½ a good sized lemon, rind removed
  • 2 slices of ginger, peeled (15-20g)


  1. Wash all ingredients.
  2. Juice the lot.
  3. Pour over ice and enjoy!

Top Tip

Wash the juicer before you sit down to enjoy your juice : -)

Good to Know

Beetroot – rich in iron, calcium, magnesium, vitamin C. Strengthens the heart, sedates the spirit, improves circulation, purifies the blood, cleanses the liver.

Carrot – rich in beta-carotene (vitamin A) which benefits the skin and eases earaches / ear infections. Carrots have anti-inflammatory properties, encourage the elimination of waste, boost liver function, are helpful for heartburn and relieving excess stomach acid, support the lungs, easing coughs and increase the milk supply of nursing mothers.

Apple – cleansing and beneficial for the liver and gallbladder (can soften gallstones) and clear digestive tract of unwanted bacteria.

Lemon – antiseptic, anti-microbial and mucus-clearing properties making it particularly useful during colds, coughs and infections. Cleanses the blood, supports liver function, alleviates flatulence and indigestion.

Ginger – natural antibiotic, improves circulation, clears congestion.
